ChocoCoco Balls

Date Paste Ingredients:

  • 1 cup of organic Medjool dates, pitted and soaked in warm water enough to cover the dates, for 10-15 minutes

  • 1/2 cup water

    To make the date paste, soak 1 cup of pitted Medjool dates in warm water for about 20 minutes to soften. Drain the water. Add dates to the food processor with 1/4 to 1/2 cup water and blend until smooth.

    To make the truffles:

  • 1 cup of the date paste

  • 3/4 cups of coconut flour

  • 2-3 tbsp raw cacao powder

  • 1-2 tsp vanilla extract (optional)

  • Pinch salt 

    In a food processor, pulse a few times until a dough-like ball begins to form.

    Take the dough ball out. Pinch a small piece of the dough or scoop it out with a teaspoon and roll it between your palms to form a small ball. You can wet your palms with water so the dough doesn’t stick.

    Kee refrigerated in a tightly closed container for up to 10 days.

    Decoration (optional):

    Finely shredded coconut flakes, cacao powder, maca powder, matcha powder, crushed cacao nibs, or finely chopped nuts of your choice.
