Breakfast Tofu Scramble
1/2 pack extra firm tofu, mashed with a fork, but still have chunks left
Egg spice mixture:
1,5 tbsp nutritional yeast
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp turmeric powder
1/4 tsp Kala Namak (black salt, that has a very strong egg-like taste and flavor)
1/3 cup nut milk or water
Salt & pepper to taste.
1 tbsp vegan butter or coconut oil for frying.
Heat up oil in a frying pan, add tofu, and fry, stirring until lightly golden.
In a bowl combine all egg spice mixture ingredients and whisk into a sauce.
Pour over tofu and fry until liquid is almost absorbed. I like to have tofu a bit moist and not too dry.
Sides: lightly sautéed mushrooms with sliced red onions, and cherry tomatoes, topped with fresh cilantro.
