Quinoa Avocado Hijiki Salad

A great easy and filling summer salad

  • 1,5 cups cooked and cooled-off quinoa

  • 1 tbsp dried Hijiki seaweed soaked in water to rehydrate (squeeze the water out when adding to the salad)

  • 2 stalks chopped green onion

  • 1 small chopped cucumber

  • 1/4 cup chopped raw zucchini

  • 1 small to medium avocado, chopped

  • 1/2 cup defrosted edamame

  • A squeeze of lemon juice

  • Salt to taste

  • Chopped cilantro, optional
