Nourishing Apple Oatmeal

Apple Pie Oatmeal.


With slightly colder fall mornings I love this grounding and nourishing bowl of apple pie oatmeal with a kick of fresh ginger and robust cinnamon flavor.

1/2 cup quick oats
1,5 cups coconut milk from a can (unsweetened) or any other plant-milk
1 small apple, cubed (save 1/4 of an apple to slice for topping)
1/2 tsp cinnamon powder
1/4 tsp grated fresh ginger root
Pinch nutmeg powder (or freshly grated)
1 date, pitted and chopped
Salt to taste and maple syrup for more sweetness if needed.

Combine all ingredients in a pot, bring to a boil, reduce to low heat and simmer for 5 min for apples to soften.
Use any fresh/dried fruits, nuts/seeds, and almond butter for toppings.
