Easy Eggplant Tomato Dish

Simple, quick, and delicious eggplant dish. Lightly sautéed eggplant, tomatoes, garlic, and fresh basil, topped with tahini- lemon dressing. Salt and paper.

  • 1 medium eggplant, cut into cubes

  • 2-3 cloves garlic, chopped

  • 1 -2 tbsp avocado oil

  • 1 cup chopped tomatoes

  • few basil leaves

  • 1 heaping tbsp tahini

  • juice from 1 lemon

  • 1-2 tbsp water

  • salt and pepper

    In a heated pan add avocado oil, add cubed eggplant, and sautee stirring until begins to soften. Add chopped garlic. Sautee for a few more min until garlic begins to release a flavor. Add chopped tomatoes, and stir for 2-3 more minutes. Towards the end add a handful of freshly chopped basil. Add salt and pepper.

    In a blender add tahini and juice of 1 fresh lemon. Add a bit of water to blend.

    Put the eggplant mixture into a bowl and pour over with tahini sauce. So simple, so delicious.
