Banana Oatmeal Pancakes
Dry:
1 cup oat flour
1 tsp baking powder or soda
pinch cinnamon powder
Wet:
1 ripe banana, mashed
1 tsp vanilla extract
1 cup almond milk
zest of orange (optional)
Coconut oil for frying
Garnish:
homemade raspberry jam
crushed pistachios
zest of orange
date syrup
Mash banana really well with a fork. The banana has to be ripe and soft. Add the rest of the wet ingredients, and mix well.
Combine dry ingredients in a separate bowl. Slowly mix both into one bowl and stir well until no lumps. Let the batter sit for 10 minutes.
Heat up 1 tbsp coconut oil in a pan. Fill in half of a ladle, and pour into the pan. Fry a few pancakes at a time for 5 min on each side, on medium heat. Gently try to turn to another side. If too wet, then fry more until you can flip on another side.
