Why I gave up all gluten

“While celiac disease is on the rise, many people suffer in silence with gluten intolerance while continuing to eat wheat products. Most do not realize how damaging wheat can be to the digestive tract.

Wheat today is far different than wheat grown 50-60 years ago. It has been bred to withstand harsher conditions, including an onslaught of pesticides. Today's wheat is shorter and less nutritious than its original.

Gluten intolerance creates many related autoimmune problems in the body that many people are not aware of.

The following issues can indicate that you have gluten intolerance:

1. Skin rashes: psoriasis and dermatitis herpetiformis (blistery rash with hives, common on arms and back of legs)

2. Collagen disorders that cause the wrists, shoulders and knees to dislocate easily.

3. Auto-immune liver damage and hepatitis.

4. Kidney problems, including oxalate kidney stones.

5. Chronic dry eyes, caused by malabsorption of Vitamin A.

6. Headaches, Constipation, Lack of Balance and Coordination.
