Vegan Okroshka.
Okroshka is a traditional summer cold soup in Ukraine and Russia. It is made from kefir or yogurt as a base. Here is the same recipe but with a vegan base instead of a diary one.
Soup base:
1 cup raw cashews, soaked in water for 2 hrs to soften
2 cups water
1/4 cup fresh lemon juice
1 tbsp apple cider vinegar
1 tsp salt or more or taste
Pinch of black pepper
Blend all until well incorporated.
Soup ingredients:
1 medium cucumber, thinly sliced in half rounds
3-5 large radishes, thinly sliced in half rounds
1/2 cup fresh dill, finely chopped
2 tbsp spring onion, chopped
Combine soup base and ingredients in a pot and leave in the fridge for a few hours so it is well chilled. Serve chilled.
