Refreshing Summer Eats: Raw Soup and Sunflower Cream Recipe

It’s hot summer, so I am doing a bit more raw foods, still within Phase 2 of Heal Candida Protocol by @hminutritionschool

Soup:

3-4 halves sun-dried tomatoes (sun-dried only, do not use the once in oil, and also no sulfur), soaked in hot water to soften, then chopped
2 cups of ripe Roma tomato chunks
1 cup cucumber chunks, skin peeled and discarded
1 spring onions, chopped
1/4 cup tbsp of freshly chopped basil leaves
Juice from 1/2 lime or more
1 large clove garlic, minced
1/4 tsp smoked paprika
1/2 tsp dried chili flakes
1/2 tsp salt, taste
Pinch cumin powder (optional)

Blend all until creamy and still slightly chunky.

Sunflower Cream

3/4 cup raw sunflower seeds, soaked in hot water for 20 min to speed up the soaking time, or 2 hrs in room temp water
Juice from 1 lemon
2 tbsp nutritional yeast (Sari brand only)
1/3 cup water + 3 tbsp more, added gradually as needed

In a high-speed blender, blend all.

I decorated mine with spiralized cucumber
